John, it sure sounds like you're facing a challenge. I'm sorry for not being familiar with your situation, but is it realistic that your mother really would or could leave the nursing home? Are you hanging on to that hope, so that this will all go away? Do you have any other family around? Are there still a lot of your mother's belongings where you are living?
If it's probable that she won't come back, or won't come back soon, don't wait for something to happen - you make something happen. If you're just starting out, don't be too picky about the job you take. Start working without delay. If you don't like it, you can always be looking for another job while you are working. At least the income is coming in!
I wouldn't think that a birth certificate or a state ID would stop you from getting hired. Even if it IS necessary, you can be submitting applications now because it usually takes some time for the employers to call you in. Some employers may be willing to wait a bit for the paperwork to catch up. Do you have a copy of the application you sent? That could possibly be used as a temporary substitute for the actual document. You never know for sure until you try!
Here's an option if you do move and become independent: Look for a room to rent, rather than your own place. When I was just starting out, I shared apartments and houses with roommates and it was a lot less expensive that way. It's not always an ideal situation, but it can work.
As far as your trip, that's a difficult situation. Hopefully, you can preserve that, but if not, you have to do what you have to do - you have to eat! If it comes to that, don't look back and be angry about it. These are real-life, grown-up decisions, and when you make your own decisions (even if you make mistakes), you grow!
If I'm reading the situation incorrectly, forgive me. I'm just going on what I read above.
Good luck and God bless!
