Cold Soups
I love cold soups. Does anyone have a good recipe that they have tried for any cold soup? Just give ones you have tried, thanks. Mango, cucumber, etc. I tried the cucumber soup and it turned out great. Cucumbers sliced in the processor really thin, lots of fresh dill and plain yogurt. You can process as thin as you want.

I also love cold soup! My favorite is gazpacho, but I have also had a cucumber-melon and I think a little mint also? soup. It was very good. I think it was cukes, honeydew and maybe a little mint and yogurt all blended together. Very good on a hot day. I don't know if I still have the recipe. I will look and post it if I have it. It won't be 'til later in the week though as I am not at home for the next few days.

I don't have the recipe (those were in the now-defunct Community Forum) but I had cold strawberry soup in Germany that was just fabulous! My brother and I had been hiking in the mountains, and although it was May and supposed to be cool then, the temp was in the low 90's. We hit the hotel restaurant and just wanted something cold. Since ice comes dear in Europe (at least, in a drink) the waitress brought us the ice-cold strawberry soup. Now that you've reminded me, I need to surf around for a recipe. It was really that good!

COLD STRAWBERRY SOUP
1 1/2 c. water
3/4 c. light-bodied red wine (rose)
1/2 c. sugar
2 tbsp. fresh lemon juice
1 stick cinnamon
2 qt. strawberries, hulled and pureed (reserve a few for garnish)
1 c. heavy cream
1/4 c. dairy sour cream
Combine water, wine, sugar, lemon juice and cinnamon stick in a 5-quart saucepan. Boil, uncovered, about 17 minutes, stirring constantly. Add strawberry puree and continue boiling, stirring frequently. Discard cinnamon stick and cool cooked mixture. Whip cream and stir in sour cream. Fold into strawberry mixture. Refrigerate several hours. When ready to serve, garnish with reserved whole strawberries. Yield: approximately 8 cups.
