Unisys does have a good discussion on their site and I do like using many of the maps from them. One of the drawbacks is though, on the GFS/ETA is that they only update twice a day (where those models update 4 times a day). The UKMET only updates twice a day anyway, so I'm not losing information there.
Unisys is a great place to start for the beginner, and also they have a good resource of past Upper air maps (like the ones used for the thread about my theories about the below normal temperatures in an otherwise overall pattern not conducive for such an anomaly.)
